Dans une poêle, faire revenir les saucisses dans l’huile 5 minutes. Retirer les saucisses de la poêle, couper les saucisses en biseau et réserver. Dans la même poêle, faire revenir le poivron rouge, l’oignon et la courgette, à feu vif de 5 à 10 minutes en ajoutant de l’huile au besoin. Ajouter le cumin, le thym, la pâte de tomate, le sirop d’érable, les tomates en dés, le bouillon de légumes, piment rouge broyé (facultatif) et bien mélanger. Saler et poivrer, réduire le feu et laisser mijoter 15 minutes en mélangeant fréquemment. Servir avec du riz basmati.
